Chocolate Chip Cookies

These chocolate chip cookies are a favourite in my house and I try to always keep some dough in the freeze for emergency cookie requests. These are quick and easy to make and ideal for kids to help with.

When it comes to the chocolate part of the cookies I use Callebaut chocolate, as to what type to use white, milk or dark chocolate that is completely up to you. I sometimes use a mixture of all three.

Tips for baking cookies depending on what type of cookie you like because recipe is only part of the process how you bake the cookie will affect how they taste.

  • Chill the dough before baking this will ensure the cookies don't spread too much when baked. If you like a thin and crispy cookie skip this part.
  • Don't over bake the cookies the centre should be a little bit soft, they will continue to cook as it cools on the tray.
  • Leave on the tray to cool down, the cookies will continue to cook as they cool down and if you try to remove them from the tray as soon as they come out of the oven they'll be too soft and will just break.
  • Use a cookie scoop to divide the dough into portion.
  • Can be made ahead of time and left in the fridge overnight or they can be frozen.

  4. Line a cookie tray with parchment paper and using an ice cream scoop divide the dough. Depending what size of cookies you want by the size of scoop you use, regular or large.
  5. Allow the dough to chill in the fridge for at least 30 minutes before baking.
  6. When ready to bake preheat the oven to 160C
  7. Place cookie dough on a cookie tray, allow a little bit of room between cookies as they will spread slightly when baked.
  8. Bake for 11 minutes, they'll be golden brown but still slightly soft in the centre.
  9. Remove the tray from the oven but leave the cookies on the tray to cool.
